Corn Week Recipe No. 5: Mumma's Corn Potato Baked Dish

5 boiled potatoes
1 cup boiled American corn
3 bell peppers (yellow, red & green), chopped – thin and long
1 cup cheezling biscuits, crushed
1 cup grated cheese (preferably mozzarella)
Salt to taste
1. To begin with, grease the baking dish with butter. 
2. Mash the boiled potatoes. Add salt and pepper as per requirements. Mix well. 
3. Add corn to it and mix. 
4. Spread this mixture in the baking dish. 
5. Arrange the bell peppers over the potato-corn mix. 
6. Spread the cheezelings over the bell pepper layer. The cheezling layer should be thick. Put few drops of butter on the cheezling layer. 
7. Add a layer of grated cheese.
8. Bake this until the cheese melts. Serve hot.
Tip: tastes best with tobasco sauce. Enjoy with soup and garlic breads.
