Corn Week Recipe No.1: Spinach and Corn Sandwich

Cooking Time: 10-15 minutes

Servings: 4

Preparation Time: 15-20 minutes

Ingredients:

  • 20-25 Spinach leaves (palak),blanched and chopped
  • 1/2 cup American corn kernels                
  • 1/2 cup Cheese,grated                                
  • 8 Brown bread slices                 
  • 1 medium Onion, chopped                                     
  • 2 cloves Garlic, chopped
  • 1 tablespoon Olive oil  + for cooking
  • 1 Green chilli, chopped
  • 1/2 teaspoon Black pepper powder
  • Salt  to taste

Method:
1. Boil corn in a microwave oven. Once cooked drain the water, add salt, pepper and mix well.
2. Heat 1 tbsp olive oil in a non-stick pan, add onion and garlic and sauté.
3. Add spinach leaves, green chilli and mix.
4. Transfer the mixture into a bowl, add corn, cheese and mix well.
5. Spread the mixture evenly on 4 bread slices, cover with remaining slices.
6. Drizzle some olive oil over each sandwich.
7. Heat a sandwich griller, drizzle some olive oil over it and grill the sandwiches till both sides are evenly golden. Cut each sandwich into 3 strips and serve hot.
