Goat cheese is often called “Chèvre” (say: shev) which means Goat in French is a cheese made from Goat Milk and has a pristine white color. The taste of this cheese can vary from strong and pungent, to delicate and mild. There are over 100 sorts of authentic goat cheeses available in different shapes and flavours. Each cheese has its own taste thanks to the various breeds of goats, recipes and maturations.

Because goat cheese is often made in areas where refrigeration is limited, aged goat cheeses are often heavily treated with salt to prevent decay. As a result, salt has become associated with the flavour of goat cheese.[wikipedia]
